A brick wood-fired oven burning oak logs, with a pizza blistering near the flames

Wood-fired pizza in Ann Arbor

Slow dough.
Oak fire.
Ninety seconds.

Ember & Oak is a neighborhood pizzeria built around a 900°F oak-burning oven. Our dough rests for 48 hours, then meets the fire just long enough to come out blistered, smoky and ready for the table.

312 S Main St, Downtown Ann Arbor

The candlelit dining room with brick walls, oak tables and the oven glowing at the back

The fire is lit before the doors open, every single day.

Our story

A neighborhood table, built around the fire.

Ember & Oak started with a simple idea: gather people around good bread and a real fire. Our oven burns seasoned Michigan oak from the moment we open until the last pie comes out.

Everything else follows the flame. We mix our dough in small batches, top it with ingredients from Michigan farms and Italian pantries, and send every pizza to the table the moment it leaves the oven.

The oven

The fire sets the pace.

Our oven is the heart of the room and the reason everything tastes the way it does. Three things never change.
  1. Step 1: Dough that takes its time

Flour, water, salt and a little yeast, cold-fermented for 48 hours. The slow rise builds flavor and a light, airy crust.

  2. Step 2: Seasoned Michigan oak

We burn split oak, never gas. It runs hot and clean and leaves a gentle smokiness on every pie.

  3. Step 3: Ninety seconds at 900°F

The crust puffs and leopard-spots, the cheese just melts and the tomatoes stay bright. Then it goes straight to your table.
